Chocolate Raspberry Cheesecake…..for ME!

Today we have a guest baker…drum roll…..its Curtis (aka: daddy).  In honor of my birthday, Silas said that he wanted to make me my birthday cake (and then volunteered Curtis to help him).  Together they made me a chocolate raspberry cheesecake. Y-U-M.   I did help a little, but mostly the boys of the house baked this themselves.   It tasted just as good as it looks.

RECIPE adapted from here.

  • First off, we used low fat cream cheese. Lets just get that out of the way.
  • Instead of vanilla extract, we used raspberry extract (in both the cheesecake and the chocolate topping).
  • For the chocolate topping,we  used 1/4c whipping cream, 3/4c chocolate chips and raspberry extract
  • We put the chocolate topping on about 30mins before we were going to eat it, covered it with raspberries, and then put it back in the fridge.
  • 30mins later, we ate!

    Updated the post with a link to the original recipe, as well as the changes we made to make it Chocolate Raspberry. I really couldn’t find a recipe for chocolate raspberry cheesecake, so I just adapted this one.

    That cake looks so much better than the one we got from the woman in Center Sandwich.

    that lady in center sandwich is what i based this cheesecake idea on. i told curtis about her and how she made the richest, most wonderful cheesecakes with ganache. i remember those cakes like it was last year. my goodness.

    There are few desserts that taste better than a really good cheesecake. Yours looks fantastic. And it is always a good thing to let other mothers know that “My Husband Cooks and So Can Yours!!!” As Margot says, “Food always tastes better when someone else has cooked it.”

    Oh yummy!! It’s official, you guys are now the cheesecake bakers of the family! Everyone will be so glad, especially Nicole (and Poppi too). Great job boys, I’m sure you made Mommy SO happy with all that chocolaty goodness in her tummy.
